One of the biggest struggles (and honestly the main reason I’m not paleo 100 percent of the time) is the convenience of finding paleo meals outside our home. When Steven or I am cooking, it’s easy to control the ingredients and every little oil or spice that goes into the meal. The Uberrito Paleo Salad is a salad, with grilled shrimp, jicama slaw, fajita veggies, chopped red onion, cilantro, guacamole and tomatillo tomato sauce to top it off. The best part is it’s customizable. If you’re not a fan of shrimp, try the ground beef! Looking for more spice? Try the Zesty Tomatillo!
So the next time you’re out and about, stop by your local Uberrito and try the Paleo bowl! I can’t wait to hear what y’all think.
