Y’all, I am so excited to share this new recipe! I’m seriously obsessed with avocados (but really, who isn’t?) and lately I’ve been craving for a recipe that mixes some of my favorite things…steak, avocado and home fries. Sound good? Keep reading.
Obviously, eating paleo relies on lots of meat consumption, so it’s imperative to have high quality, grass-fed and finished beef. Grass-fed and finished means the cows are consuming grass throughout their entire lives. Simple. The majority of cows raised for human consumption in the U.S., eat grains…not grass. This is why it’s so important to eat grass-fed beef. I do a lot to avoid grains in my diet, so I don’t want grains sneaking in through my beef.
I get my grass-fed steak from ungrocery. Ungrocery is an online marketplace for quality food that connects you straight to the origin. Now for this delicious recipe:
- 3 avocados
- 1 purple onion
- 3 cloves garlic
- 1 jalapeno
- 1 cup cilantro
- 1 cup parsley
- 1 tablespoons apple cider vinegar
- 1/4 cup olive oil
- 1 lime
- pinch of salt
- big pinch of pepper
- 4 large potatoes
- avocado oil spray
- sea salt
- pepper
- Tony's chachere
- Grass-fed and finished new york strip steak from ungrocery
- ghee
- salt and pepper

Cut up all the ingredients. Remove the seeds from the jalapeno and the stems from the cilantro and parsley.

Place everything in a food processor (or blender) and blend until desired texture. I prefer mine smooth.

Preheat the oven to 400 degrees.

Cut up the potatoes into cubes.

Place parchment paper on a large cooking sheet, spread the potatoes on the sheet.

Spray the potatoes with avocado oil spray.

Sprinkle sea salt, pepper and Tony's on the potatoes.

Cook for 35 minutes at 400 degrees and broil for 5 additional minutes.

Place a cast iron skillet on the stove on medium heat.

Add ghee to the cast iron skillet.

Pat the steak dry and place it in the cast iron skillet.

Cook on each side for around 5 minutes for medium well.

After cooking, let the steak rest for 5 to 10 minutes.
