So, I might be obsessed with potato bowls. Don’t judge. I know there’s a whole debate about white potatoes being paleo. In my eyes, they are. They’re filling and perfect for brunch, especially after a long hot yoga class. I also love they’re so easy to customize to fit how hungry you are or different taste buds.
Just a heads up, I won’t be sharing “normal” recipes like your use to on other blogs, with information about tablespoons and cups…because real life can be crazy, and I very rarely measure anything. When it’s necessary, I’ll include it. When it’s not, I’ll provide outlines. My hope is to provide you with inspiration to create your own recipes!
How I make my potato breakfast bowls:
- Pick a potato
- sweet
- white
- purple
- Decide how to cook it
- roasted in the oven
- roasted on the stove top (my favorite, I roast mine in Epic Pork Lard)
- cooked in the over
- roast in a cast iron skillet, broil for a few minutes
- Add a protein
- eggs
- pork
- bacon
- brisket
- Add toppings
- guacamole
- salsa
- sauerkraut
- really anything your taste buds desire!
