I’m super excited to be pairing up with Loam Agronomics to bring you paleo recipes featuring items from their weekly CSA boxes. This is a great opportunity and I’m so excited to bring you new recipes with some vegetables you might have never heard of!
With summer here, most of us are spending more time with friends and family. Whenever we get invited somewhere for dinner, I love to bring an easy appetizer and salsa is normally my go-to. It’s great because I can use paleo cassava flour chips (Siete lime flavor are my favorite!) and others can use tortilla chips. I also love having leftovers to serve over eggs in the mornings.
- 4 hot peppers, seeds removed
- papaloquelite
- 1 sweet green cowhorn, seeds removed and diced
- 1 small bell pepper, seeds removed and diced
- 1 tsp cumin
- 4 garlic cloves
- 1 juice of lime
- salt and pepper to taste
-
Dice or chop all of the ingredients and add to a food processor. Once everything is in the food processor, set it on low for a few minutes. I prefer my salsa finely chopped, but if you prefer a more chunky salsa, pulse to the wanted consistency. Serve with chips, tortillas or over eggs!
