Cold weather, leggings, oversized sweaters, fires in the fireplace, Christmas lights and paleo hot chocolate. Doesn’t that all sound amazing? I love all the things that come with winter, but hate the cold. Normal, right?
Recently, I got a Vitamix! I found a used one on a Facebook selling group. Barely used and in perfect condition. The best part? Half the price! Merry Christmas to me!
I knew a true test for the Vitamix would be to see how it handles dates. My Ninja could handle dates, but not like the Vitamix. It’s truly amazing how well it blends everything. Ok, so I decided to make up a paleo hot chocolate recipe to see how well this Vitamix really works. Holy moly, it works, it works reallll well.
Paleo hot chocolate
- Heat up a cup of some kind of milk. I did a cup of cashew milk.
- Pour the milk into a blender
- Add 2 to 3 dates (remove the pits first!) or honey
- Add 1.5 to 2 tablespoons of unsweetened cocoa powder
- Blend on high for a bit, then on low
- Pour into a mug!
- ENJOY!
As a side note, I buy my dates from Costco! They’re cheap and you can get a big ol’ bucket of pit-less dates for a great price! I also buy my unsweetened cocoa from Costco. I’m never going to run out…
My favorite thing about this recipe is how frothy it comes out! It’s fantastic. Let me know if you give this recipe a try! If you post a photo on instagram, make sure to tag me @MeganPaleo!
