Once again, I’m pairing up with Loam Agronomics to bring you paleo recipes featuring items from their weekly CSA boxes. This week, I’m sharing a recipe for paleo fried okra!
First off, can we all agree okra is like the weirdest? Not only does it look weird, but you cut into it and there is slime. Fun fact, the slime in okra is the same as the slime in aloe vera plants. Besides the slime, I love okra. Either fried or just cooked with some garlic and seasoning.
- 2 cups okra, washed and sliced
- 2 eggs with a splash of nut milk, I used cashew
- 1.5 cups blanches almond flour
- 1 tbsp paprika
- 1 tsp salt
- ghee to cover the pan
- .5 cup mayonnaise
- 1/3 cup full fat coconut milk
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tbsp dill

beat the eggs and mix well with nut milk

mix the almond flour, paprika and salt in a separate bowl

add ghee to a saucepan and place over medium heat

mix the okra in the egg bath then in the flour mix

place the okra in the pan until golden brown, once golden brown remove the okra and place on a paper towel

repeat until all the okra is fried

Mix all the ingredients together to form a thick ranch consistency

I haven’t yet, but I’m sure it’d work! I’d suggest 360 degrees for 15 minutes or so, checking/tossing every 5 minutes.
