I know I’ve shared this recipe all over my Instagram, but it’s a staple meal and I wanted to share it again. Each time I make chicken salad, I mix it up. I’m really proud of the way this one turned out – so I decided I needed to post it!
On Sundays, we try to meal prep our lunches and chicken salad is such an easy thing to make! After eating plain chicken for a few weeks, I decided with summer right around the corner, a cold chicken salad would be yummy on a hot day.
Paleo Chicken Salad
Ingredients
- 3 Chicken breast, shredded and diced
- 1/4 cup Spicy mayo
- 1/2 cup Mayo
- 2 tbsp Dijon mustard
- 1/2 cup Celery, diced
- 1/2 cup Red onion, diced
- 1/2 cup Green grapes, sliced
- 1/2 cup Chopped walnuts

Mix all ingredients together and let chill in the fridge
