Nopemeal – Paleo Oatmeal

I won’t bore y’all with a long life update before sharing the recipe. But here’s a quick recap – Steven and I are now homeowners! So far, so good! The only annoying part is a flea infestation in the backyard…ugh. We’re working on getting it under control, but poor Gundy (who’s on flea meds) had his stomach bitten up.

We knew the master closet was ROUGH. But we thought we could definitely live with it for a few months. NOPE. We couldn’t hang anything or really do much with it…so we demoed out the shelves, patched it, painted and plan to install a knockoff Elfa system. Holllla! We should have it done tomorrow or Monday. I’m hoping to share a post on this because it was so much easier than I expected!

Lastly, we found an antique record cabinet and we’re restoring it. I might have to do a post when we’re done. We’re so excited for this piece and IT WORKS! No lie, we had to facetime my dad to figure out how to get the record player to work….#milennialprobs. I’m excited to have this unique piece for years to come.

Ok, so with this new house…comes the most amazing kitchen. I feel like this past year, I really didn’t enjoy cooking because I hated our kitchen. It was small, cramped and probably my least favorite room in the house. Now, I love our kitchen and am enjoying cooking again!

Steven woke up early to play golf, so I slept in a bit and decided to try paleo oatmeal, which I’ve been calling nopemeal. I’ve seen a few different people post about it and decided to give it a try. Y’all…it’s so easy to make, so I’m not even sure it counts as a recipe. Also, the amounts of the ingredients is flexible! Add what you like and make it your own!

Nopemeal – Paleo Oatmeal

Ingredients
  • 1 cup Cauliflower Rice (I used frozen)
  • .5 cup Full Fat Coconut milk
  • 1 diced Apple
  • Cinnamon
  • Nutmeg
  • Honey (optional)
Instructions
  1. Put the cauliflower rice in a saucepan and add enough full fat coconut milk to almost cover the rice. Put on medium heat.

  2. Dice up a small apple.

  3. Add apple and seasonings to the saucepan.

  4. Let simmer until it's creamy and thick.
